Chef Allen grew up in Philadelphia, PA . As a kid he was always fascinated with the smell of food on Sundays and on Holidays. He started playing in the kitchen when his mother would go to work during the summer months. Growing up in Philadelphia in the 80's & 90's Allen was surrounded by various types of cuisine. When he got his first fast food job at the age of 16 that's when it clicked that he would be in food service for life.
He started out at the Sheraton hotel in Langhorne, PA where he learned all the basics of french and Italian cooking ( cuts, sauces, different meats, omelettes, etc); after 2 years he decided to leave for the Marriott in Center City Philadelphia. He immediately climbed up the latter from an expediter to lead cook in just 1 year. He was recruited to work in JW's which was the fine dining Restaurant located inside the Marriott. Allen the left the for DC after Chef Brain Hall recruited him to the Marriott there. Allen would spend the next 10 years working in DC, Miami, Key Largo, St.Kitts, Atlantic City, Houston and then back to Philadelphia. Upon the death of his Mother in 2011 Allen decided to leave Corporate America to embark on entrepreneurship, he wanted to leave his footprint on the Culinary world for his family. Allen began catering from home which led to him Participating in the Philly's Men are cooking for 3 years he won best Mac & Cheese. In 2014 Allen opened up his first Restaurant in Philadelphia named Route 23 cafe and hasn't looked back. In 2017 Allen began to travel to spread his culinary experiences by helping other Chefs and being more active on Social media and other platforms.Allen is currently working on his second restaurant in Charlotte. He has studied Italian, French, Thai, Southern, Creole style cooking.
